Put the octupus in a pot, in an average temperature. Let it start getting red. As soon as it starts getting tight, cut its tentacles one by one. Mix the olive oil, the pepper and the thyme. Put the tentacles in the marination and turn them upside down to be spread everywhere. Cover and leave the octopus in the fridge for one night. When you are about to serve, prepare the coals on the grill, or preheat your cooker's grill well. Strain the tentacles and grill them for 8-10 minutes from each side, until the octopus starts getting red. Put the marination in a small pot. Place the tentacles together with the rucola and the thyme. Sprain them with the marination and the lemon.
